Tequila in the Jar
An Old Fashioned pared back to almost nothing: reposado, a quarter ounce of honey, and enough vanilla orange bitters to tie the barrel notes to the citrus. Stirred long, because dilution is the only other ingredient.

Ingredients
2.5 oz reposado tequila
0.25 oz honey syrup (3:1 honey to warm water)
4 dashes vanilla orange bitters
Method
- Combine the tequila, honey syrup and bitters in a mixing glass with ice.
- Stir 30 to 40 seconds, until the glass is cold and the drink has softened.
- Strain over a large cube in an old fashioned glass.
- Express an orange peel over the surface and drop it in.
Panel note
Cut the honey with warm water first. Straight honey seizes on contact with cold tequila and never fully integrates, however long you stir.
