Desert Maple
Maple against amaro, with reposado bridging them: the barrel in the tequila already points at the syrup, and the Amaro di Angostura keeps the whole thing from going soft. Grapefruit and lemon do the cutting.

Ingredients
1.5 oz reposado tequila
0.75 oz fresh lemon juice
0.5 oz Amaro di Angostura
0.5 oz maple syrup
0.5 oz fresh grapefruit juice
0.25 oz simple syrup
Method
- Add all ingredients to a shaker with ice.
- Shake hard until well chilled.
- Strain over fresh ice in a rocks glass.
- Garnish with a lemon wheel.
Panel note
Use a dark maple, grade A or darker. A pale table syrup brings sugar and no flavour, and then the amaro has nothing to argue with.
