Tequila Southside

The gin Southside with agave underneath it. Mint, lime and soda keep it long and cooling, and the tequila reads green and peppery rather than botanical: the same drink pointed at a different plant.

Ingredients

2 oz blanco tequila
1 oz fresh lime juice
0.75 oz simple syrup
8 to 10 fresh mint leaves
Soda water, to top

Method

  1. Press the mint gently against the side of the shaker with the simple syrup. Bruise it, do not shred it.
  2. Add the tequila, lime and ice, then shake until well chilled.
  3. Double strain into an ice-filled Tom Collins glass.
  4. Top with soda water; garnish with a mint sprig and a fresh lime wheel.
Panel note

Double strain it. Shredded mint left in the glass looks careless and turns bitter by the second sip.
