Tequila Mezcal Espresso Martini
An espresso martini built on agave, with half an ounce of mezcal doing the work a dark roast usually does. The smoke stops reading as smoke next to coffee and starts reading as char, which is exactly the point.

Ingredients
1 oz blanco tequila
0.5 oz mezcal
1.5 oz Licor 43
1.5 oz fresh espresso, hot
Method
- Pull the espresso fresh and add it to a shaker with the tequila, mezcal and Licor 43.
- Fill with ice and shake hard until the tin frosts and a thick head builds.
- Double strain into a chilled coupe.
- Float three espresso beans on the crema.
Panel note
Use a joven espadin. Half an ounce of it is a seasoning; half an ounce of something heavier and more rustic turns the whole drink into a campfire.
