Tequila Carajillo

Mexico City's after-dinner standard, rebuilt on agave. Licor 43 brings vanilla and citrus, fresh espresso brings the bite, and a blanco with real pepper keeps the whole thing from sliding into dessert.

Ingredients

1 oz blanco tequila
1.5 oz Licor 43
1.5 oz fresh espresso, hot

Method

  1. Pull the espresso fresh and add it to a shaker with the tequila and Licor 43.
  2. Fill with ice and shake hard until the tin frosts and a head builds.
  3. Strain over a large cube in an old fashioned glass.
  4. Dust the foam with decaf espresso grounds.
Panel note

Shake it harder than feels necessary. Hot espresso hitting ice is what builds the crema, and that head is the entire texture of the drink. Decaf grounds on top mean the garnish never adds a second hit of caffeine.
