Mint Peach Margarita
Peach and mint against lemon rather than lime, then lengthened with ginger beer. The ginger is what stops the peach from going syrupy, and it turns a margarita into something closer to a mule.

Ingredients
2 oz blanco tequila
1 oz peach syrup
0.75 oz fresh lemon juice
8 to 10 fresh mint leaves
Ginger beer, to top
Method
- Press the mint gently against the side of the shaker. Bruise it, do not shred it.
- Add the tequila, peach syrup and lemon, then fill with ice and shake hard.
- Double strain into an ice-filled Tom Collins glass.
- Top with ginger beer and garnish with a mint sprig.
Panel note
Ginger beer, not ginger ale. Ale is sweetened water with flavouring and leaves the peach with nothing to push against; beer brings the heat this needs.
