Mexitini

A martini with agave in the gin's place, and bianco vermouth rather than dry, which keeps a little sweetness under the herbs. Two and a half ounces of blanco with almost nothing to hide behind: this is a bottle test in a stemmed glass.

Ingredients

2.5 oz blanco tequila
0.75 oz bianco vermouth
1 dash orange bitters

Method

  1. Combine all ingredients in a mixing glass with ice.
  2. Stir 30 seconds, until the glass is cold and the drink has softened.
  3. Strain into a chilled martini glass.
  4. Express a lemon twist over the surface and drop it in.
Panel note

Stirred is the default: it stays clear and keeps the vermouth's weight. A hard shake makes it colder, brighter and slightly cloudy, which suits a warm afternoon but flattens the vermouth. Both are correct; they are not the same drink.
