Cucumber Margarita
Cucumber muddled into a full-acid margarita, with just a quarter ounce of Cointreau for lift. The cucumber reads cool and green rather than sweet, which is what keeps this from being another fruit margarita.

Ingredients
2 oz blanco tequila
1.25 oz fresh lime juice
0.75 oz agave nectar (2:1 agave to water)
0.25 oz Cointreau
2 cucumber slices
Method
- Muddle the cucumber in the bottom of a shaker until it gives up its water.
- Add the tequila, lime, agave and Cointreau, then fill with ice.
- Shake hard until well chilled.
- Double strain into a salted glass over fresh ice; garnish with a cucumber wheel on the rim.
Panel note
Double strain it. Cucumber breaks into fine pulp that a single strain lets straight through, and it turns the drink cloudy and slightly bitter by the last third.
