Meximodo Cocina Mexicana & Tequila Bar, the Metuchen, New Jersey restaurant once certified by Guinness World Records for a 1,033-bottle agave spirits collection, plans to open three more New Jersey locations, in Parsippany, Marlboro and Montgomery Township, by 2027.

The expansion was reported by NJ Monthly and NJ 101.5 in late October 2026. It follows a second Meximodo location that opened in Jersey City, adding to the original Metuchen restaurant that put the concept on the map in 2024.

What the Guinness title covered, and who holds it now

Meximodo's parent company, Le Malt Hospitality Group, built its agave spirits list while preparing to open in Metuchen, and the total grew large enough to pursue a Guinness World Records title. On July 24, 2024, National Tequila Day, Guinness World Records designated the restaurant the holder of the title for most varieties of agave spirits commercially available in a bar-restaurant, with representatives citing a final count of 748 tequilas, 246 mezcals and 39 other agave spirits for a total of 1,033 varieties. TJ Pingitore, a senior Meximodo executive, told Fox News Digital at the time that the previous record had stood at right around 600 unique bottles. That title has since changed hands. According to Patch, the record now stands at 1,825 bottles, achieved by Junior Merino of the Liquid Chef & M Cantina in Dearborn, Michigan, who won the title in June 2025, making Meximodo a former record holder rather than the current one.

From a Metuchen flagship to a second site in Jersey City

Meximodo is owned by Le Malt Hospitality Group, led by founder and chief executive Saurabh Abrol. Patch reported that the concept traces to 2021, when Abrol's daughters asked him to open a restaurant the family could actually visit together. The flagship opened on Pearl Street in Metuchen, Middlesex County, in November 2023. A second Meximodo opened roughly two years later inside Haus25, a residential building at 25 Christopher Columbus Drive in downtown Jersey City, across from Whole Foods and two blocks from the Grove Street PATH station.

Where the next three locations are and when they open

NJ 101.5 reported specific target dates for each of the three new sites, citing company plans: a Parsippany location inside District 1515, a mixed-use development off Route 10, targeted for March 15, 2027; a Marlboro location at 133 South Main Street on Route 79, the former site of Fireside Grill and Bar, targeted for August 1, 2027; and a fifth Meximodo at Montgomery Promenade, 40 Nevius Boulevard in the Skillman section of Montgomery Township, Somerset County, targeted for October 1, 2027. Those dates have not been uniform across coverage. Parsippany Focus reported in late October 2026 that a "Coming Soon" sign had gone up at the District 15Fifteen space but that an opening date had not been set, and NJ Monthly's broader account simply placed all three openings by October 2027. A June 2026 report in a Yahoo News/NJ.com account had Abrol targeting the Parsippany opening by the end of 2026 and Marlboro for spring or summer 2027, and noted that Abrol is separately opening a pan-Asian restaurant, Sho-Asian Table, in Red Bank, using the same interior design firm, Celano Design Studio, that designed the Meximodo locations.

What this means

The firmest fact across outlets is the direction of travel: a four-year-old Mexican restaurant group is scaling from two New Jersey locations to five. The exact calendar for Parsippany, Marlboro and Montgomery Township is still moving between sources and should be treated as provisional until each site confirms its own date. Separately, Meximodo staff have named Tequila Ocho and El Tesoro among their personal favorites from the shelf; both brands appear in Tequila Watch's own bottle database, independent of any relationship with the restaurant or its parent company.
