Geronimo Tequila Bar and Southwest Grill opened its third restaurant, and first outside New England, at 105 East Atlantic Avenue in Delray Beach, Florida, in January 2026, nineteen years after the chain's 2007 founding in New Haven, Connecticut.

The opening was covered in an August 14, 2026 feature in Boca Raton Magazine, written by Christie Galeano-DeMott under the headline From the Magazine: Tequila Fever, which walked through the interior redesign of a space that had previously housed Cabana El Rey. What Geronimo's tequila list actually contains

Geronimo was founded in 2007 by Robert Bolduc and Marc Knight at 271 Crown Street in New Haven, expanding to a second location at 2070 Post Road in Fairfield, Connecticut, in 2013, according to Westfair Communications. The group built its identity around Santa Fe style Southwestern cooking, which Bolduc has described as a fusion of Native American, Spanish, Mexican and Moroccan technique.

Alongside the food, Geronimo assembled a tequila list its owners and trade press describe as the largest on the East Coast, with more than 400 tequila and mezcal listings, according to Total Food News and the travel guide Wanderlog. In 2016 the restaurant became one of the first in the world to receive the CRT Award T Certification, known in Spanish as Distintivo T, a credential issued by Mexico's Consejo Regulador del Tequila, the government body that regulates tequila's appellation of origin.

Total Food News reported in 2017 that earning the certification required 80 percent of Geronimo's staff to pass a written exam after ten hours of training covering agave cultivation, tequila history and the distillation process, part of it delivered by a representative from the Mexican consulate. The restaurant also had to confirm it purchases and serves only CRT-certified tequila. At the time, the outlet put the worldwide count of restaurants holding the certification at roughly 40. A more recent figure from the CRT, tied to a certification ceremony in Madrid, put the global total of Distintivo T recipients at 138, suggesting the credential has spread considerably since Geronimo earned its award.

How the Delray Beach location took shape

Boca Raton Magazine noted that Geronimo's Florida plans had been publicly teased for roughly a year and a half before the restaurant actually opened. Westfair Communications reported the new space runs about 5,000 square feet and was designed by Christian P. Arkay-Leliever, replacing Cabana El Rey's Latin themed interior with a New Mexican one built around wood ceilings, chevron patterned paneling, gas lighting and walnut barrel booths, details Boca Raton Magazine described firsthand after the opening. The Hartford Business Journal reported the Delray Beach restaurant opened roughly 1,300 miles from the New Haven flagship, making it Geronimo Hospitality's first venture outside Connecticut.

What this means

One footnote worth flagging for anyone drawn in by the size of the list: a 2017 trade report noted Geronimo carried its own house labeled Herradura tequila. Herradura's standard Añejo sits in Tequila Watch's blind rankings with a score of 85 and an Unverified purity status, meaning no independent confirmation exists that it contains no additives beyond what the brand discloses. A list running past 400 bottles and a CRT service credential describe depth of selection and staff training. Neither says anything about what is actually inside any single bottle poured from it.
