Volans
History
Volans was founded by Chad and Cristina Allen together with Cristina's father Miguel, an agronomist with agave fields in Jalisco who proposed the idea in 2014; the first liquid went into barrels in 2016 and reached the market in 2019. The tequila is made at Felipe Camarena's El Pandillo distillery in Jesús María using estate agave and a mix of rain, spring and well water, and the name, a flying-fish constellation, nods to the founder's fly-fishing roots.
