Founded by Guillermo Sauza, the great-great-grandson of Don Cenobio Sauza, Fortaleza revived fully traditional production, tahona milling, open fermentation, and copper pot stills, at the original family estate in the town of Tequila. It is widely regarded as the reference point for traditional blanco.
